Chef Bio
At the age of 32, Gordon Bailey already has a long history in the world of restaurants. In his hometown province of Manitoba he first worked as a dishwasher at a local restaurant when he was 14. The atmosphere; high energy and a little crazy, appealed to his rebellious nature. He climbed the ranks and began working in some of the great restaurants and private clubs in Winnipeg.
He’s represented his Province, Region and Country at Culinary Competitions around the world where he thrived being challenged by cooks like him. He traveled Europe; Germany, France, Italy – doing stagiaires in kitchens and just taking in the food arts of countries new to him.
Gordon returned to Canada and his passion for seafood took him to the East Coast, where he has called P.E.I. home for a decade. He had been Executive Chef at the Inn at Bay Fortune, the Inn at Spry Point and The Inn at St. Peter’s before opening his own restaurant in 2005. Dayboat, a one hundred seat restaurant in Oyster Bed Bridge was named among the top 10 new restaurants in Canada by EnRoute magazine and received great press and acclamations from all over Canada and the U.S. within its first year. Gordon and his team took a tired, “quaint”, bay-side restaurant that had seen its day and turned it into a seasonal, rustic/refined, hip place to dine. He severed all ties to that restaurant on 2006.
Gordon then took the Confederation Court Mall’s existing food court and turned it into the Urban Eatery. A seven station food extravaganza catering to mall patrons and the downtown work force. A huge renovation/overhaul that has been successful to say the least.
So that brings us to June 2008. Gordon is back on the evening dining scene with his second restaurant, Lot 30. Opening with little (or no) fanfare, both locals and tourists have claimed it to be their new favourite spot, “Somewhere that could be found in Toronto, Montreal or New York”.
Lot 30 doesn’t boast a particular type of cuisine and hasn’t given itself a label. It is a year – round restaurant in the heart of Charlottetown where simply, Gordon Bailey will cook for you. Dining at Lot 30 will mean an exceptional meal delivered with exceptional service in a setting somewhat unknown to this city. Designing the restaurant on his own along with his wife Traci, it should feel like Gord’s place. His place to invite you to dine and enjoy. If, at the same time, he gets to do what he loves best – be at the helm of an intense kitchen working with only the best product – then we all win.
